Waffle Hill Waffles

Growing up one of our favorite things to do was go to my Aunt and Uncles farm on Sundays and eat waffles. My Aunt Janie was famous for her waffle recipe. So famous that their farm is called Waffle Hill Farm. I thought I would share the recipe. It is the BEST waffle recipe out there!

The ingredients......

 

2 Eggs

2 Cups of Milk

1/2 cup of Vegetable oil

1 1/2 Cups flour

1/2 Cup of corn meal

1 TBS Sugar

5 Tsp Baking Powder

3/4 Tsp Salt

 

Beat eggs milk and oil together until they are mixed together.

 

While you are mixing up the ingredients pug your waffle iron in and grease it with cooking spray and preheat it to the light waffle setting on you waffle iron.

 

 

Then add Flour, corn meal, sugar,baking powder and salt.

 

   

 

 

 

Mix together until all the lumps are gone. The batter should be smooth with little bubbles in it. You are now ready for the waffle iron. I took lots of photos of my waffle iron but it is so well warn and ugly that I chose not to post them. It's not pretty folks,not pretty at all. It does beat the last one I had. It belonged to my Great Aunt Catherine Scollon who was born in 1901. So I guess the one I have now is an improvement. Mine works just fine, so until it breaks I will continue to use it.

 

Pour your batter onto your iron, do not fill it all the way to the edges. As it cooks it will spread out to fill the space. If you fill it too full it will leak out (this always happens to me no matter how hard I try not to do it).

Cook the waffles until golden brown. I usually do this by winging it, but just for you I timed it. My waffle iron it took about 2 minutes 30 seconds give or take. Do not try to check the waffles before they are finished, give them a chance to cook. If you don't they will stick. Remove them from your waffle iron with a fork very carefully. They should lift out easily

The smell floating through the house attracts all kinds of love and devotion.....

 

My wonderful husband is in charge of making the bacon. It's his thing, he is very good at it and it is always perfect. I like it because it does not distract me from my waffles. When you make waffles it's a bit time consuming (but don't let this deter you). You have to stand there and cook all the waffles before you get to have your own. Don't step away from the waffles for too long or they will burn.

 

It is worth the wait. I am always guaranteed a hot waffle or two! Every time I eat these I think about my Aunt Janie, and all of the wonderful Sundays spent waiting for the waffles to be ready. We all sat down together all the cousins and Aunts and Uncles and enjoyed our meal and each other.

These look heavenly. I wanted some this morning but settled for some pancakes. Blah.

I have a similar recipe to this and it's called Sunday Supper Waffles from the Country Cookbook. The differences include whipping the egg whites and adding them at the end, stirring just enough to incorporate them. Awesome.

Can you eat Waffle Hill Waffles without scrapple? Two great tastes that go great together. I'll try this the next time I make waffles. We ate them a lot after the wedding (did not have a waffle iron before that) but usually only make them now for company.
