Yes that is right. Utter bliss is the only way I can describe it. Last night I made Enchiladas. I found the recipe on a blog that I just started reading. It just happens to be the blog of my favorite author, Diana Gabaldon.
She posted the recipe a couple of weeks ago. I copied it onto word and planned to make it on a day that I had a big chunk of time so that I would not be rushed. I had a nice chunk of time yesterday since the weather was awful. I asked her permission to link to the recipe and she told me that indeed I could. So go over here, and check out the recipe. I have made a lot of different enchilada recipes and this by far is the best I have ever had, including ones I have had in restaurants.
It was a very easy recipe to follow. I made mine with cheese and ground beef. You can use the basic recipe and add what ever fillings are your favorite. I love recipes that I can change around and mix up a bit. I made two dishes of them and put one away in the freezer for another time. Which I never do because I never plan ahead(this excites me greatly!).
