We were really busy today! Cookies cookies cookies everywhere!
We made Pioneer Woman's Chocolate Candy Cane Cookies. They turned out really well. The kids really enjoyed dipping them and covering them with broken candy canes. It is a super easy recipe, It looks fancy but was not really that hard to make. Thanks PW!
The girls made chocolate dipped pretzel sticks. Melted chocolate chips, and some fun things for rolling them in, a fun treat for the kids to make. They had a ball making them all. I used both melted chocolate chips and a special dipping chocolate purchased at the craft store. The dipping chocolate was easier to use, but the chips work in a pinch. We rolled them in broken candy canes, mini chocolate chips, and heath toffee bits. we also drizzled a few with white baking chocolate too.
We also made Scottish short bread cookies. A family recipe handed down from my Great Aunt Mae. This is my most favorite Christmas cookie ever. It is a very easy recipe using three basic ingredients.
1 Cup of butter
1/2 cup sugar
2 1/2 cups of flour
Cream the butter and sugar together, add flour, mix throughly. Roll into a small sized ball and push down using a fork to flatten them a bit. (above I used the pointy side of my meat hammer, it made such a pretty imprint!)
sprinkle with colored sugar or your favorite holiday decorations. Cook at 350 for 10 to 15 min, until it gets just a little brown around the edges.
They are just so good! Especially with a cup of tea.
Our next cookie was the classic sugar cut-out cookie. Again a closely guarded secret family recipe (Don't tell my Mom! shhhhh) Really My Mom was here helping and saw me taking all the pictures so I am sure the jig is up.
3/4 cup of butter
1 1/4 cups of sugar
1 egg
2 tsp vanilla
1/2 tsp salt
2 1/2 cups flour
Cream butter, and sugar together until nice and soft. Add egg and vanilla, mix well. Then add flour, and salt. Continue to mix until all ingredients are combined.
form the dough into nice big balls and chill the dough for about an hour (this is an important step it allows the dough to roll out easier). Go do your nails or take a spa bath while you are waiting, you deserve it!
Roll your cookies out on flour covered parchment paper or if you have a nice granite counter-top use that. Use your favorite cookie cutter shapes, and sprinkle with your favorite Christmas decorations and bake at 350 for about 10 min. Just until they get brown around the edges.
We has such a good time today! No TV Just our favorite Christmas music all day long.
Our trusty quality control inspector was there making sure we were keeping all the cookies the precise size indicated on the recipe

Looks like yummyville down there in MD! We made bunches of cookies to give to the teachers on the last day of school...which turned out to be a snow day! So we are surrounded by them and eating way too many. Yours look so delicious. I think I may try the shortbread recipe thanks!
