It's cold today on Spruce Hill! So I thought I would share a nice warm recipe with you all. We had it for dinner last night and it was so good. This is the bowl I had for lunch.
It's Italian sausage soup! Heres the recipe:
-One package of Italian sausage,browned and cut into bite sized pieces (You can also substitute chicken if you do not eat meat. Rotisserie chicken works really well)
-Eight ounces of Pasta, what ever kind you like. Here I used tortellini because it is my favorite!
-One 15 oz can of cannellini beans drained ( here you can use any kind of kidney beans these are just white ones)
-One can of Italian style diced tomatoes
-2-3 stalks of celery chopped
-3 carrots peeled and chopped
-One small onion diced
-2 to 3 cloves of garlic ( I just buy the jarred diced garlic because it saves a lot of time and I eat a lot of garlic)
-One small bag of spinach ( I do not use the whole bag because if I did my kids would freak!)
-A splash of olive oil
-5 cups of chicken broth ( Sometimes I add water or more broth to it if I have it because I love brothy soups)
-Salt and pepper to taste
First you need to brown the celery, carrots, onion,and garlic in the olive oil in a large pot. Then add the sausage, brown it until cooked though, then chop the sausage up into bite sized pieces. Add tomatoes, beans, broth, and spinach. Simmer until veggies are tender. In a separate pot boil pasta until al dente, add to soup at the last minute. Serve with Parmesan cheese sprinkled on the top, and some nice crusty Italian bread!
This is what I call a quick soup. You can do it on a week night. It does not take long. I have also done it in my crock-pot on days we have riding lessons. When we get home it is warm and ready to eat!

Not to pick Nits, but "You can also substitute chicken if you do not eat meat."??? One thing I know from growing up on the farm is that chicken is meat.

That sounds amazing! I think I actually have all those ingredients. It's very similar to a recipe I have for pasta e fagioli (except mine has a bean puree in it too. we sometimes sub black beans which turns it purple. L calls it purple soup.) I may have to forgo our usually Friday pizza...
