We set out to make something new and fun this morning. Miss H picked the recipe and I have to say that she hit the jackpot! These are so easy to make and so good. Here is what you need
For the cookie
- 1 box of devil's food cake mix
- 1/2 cup of butter
- 2 Eggs
For the filling- home made marshmallow fluff
- 3 Egg Whites
- 2 Cups of Light Corn Syrup
- 1/2 tsp Salt
- 2 Cups of Powdered Sugar
- 1 TBS Vanilla
Preheat your oven to 350 degrees and then mix cookie ingredients together until combined.
Drop spoonfuls of cookie dough onto a greased cookie sheet, a few inches apart. Bake for 10 minutes and Let cool completely.
Next separate the egg whites and combine them with the corn syrup and salt on high until it thickens, about 10 minutes.
Add sugar then vanilla and beat until blended.
If it drips and makes a mess don't worry that's what fingers are for!
Add a small spoonful of fluff to your cookie and then sandwich together.










Okay, next day we have a snow day (during those 18 feet of snow, I believe there was only ONE) we'll make these!! Either that, or we'll munch on them this weekend :P

I found you on Tasty Kitchen and blog rolled you because I think your site is gorgeous! My New Year's Resolution was to try a new recipe every week this year. This is my recipe for the week. We are in North Texas and we might get snow this week. I want to make these with my boys! Too fun - they will love it!! Thanks for sharing!

Mine turned out really flat - good, but flat. I haven't made the cream yet - serving them tomorrow, so I'll make the cream then. Not sure why they are so flat?
