Last night we had barbecue chicken cooked on the grill. It was perfect grilling weather. Nothing fancy, just a pepped up bottled sauce (my hubby did the sauce). When we have left over chicken of any kind I love to make chicken salad from what's left over. We had a lot of left overs, and my absolute favorite is chicken salad made from leftover BBQ chicken!
Ingredients for the Chicken salad (all these are general measurements I just winged it)
About 4 boneless chicken breasts barbecued out on the grill and chopped into nice sized chunks
1 cup of mayo (don't use low fat mayo, it would just be wrong)
2 tsp walnut oil
A dash of celery seed
A dash of tarragon
A dash of salt and pepper
A handful or so of cut up grapes
A bit of chopped sweet onion
Mix all together and put it in the fridge.
The Rolls
1 Cup of warm water
2 TBS of butter
1 egg
3 1/4 cups of flour
1/4 cup of sugar
1 tsp salt
3 tsp of quick-acting active dry yeast or bread machine yeast.
Put the ingredients into your bread machine in the order given. I forgot to take a picture of the water, that goes first, sorry. Then the butter and so on.
Make sure you have a little dent in the top of your mound of ingredients for the yeast.
Set your machine on the dough setting, then press the button. Go do your nails or eat some chocolate. It will take about an hour. Have I told you how much I love bread machines? Well I do, I love them!
When your dough is ready, lay it out onto a piece of floured parchment paper and make into a rough rectangular shape.
Cut the rolls out to a nice size. I like to use a pizza cutter, it makes it a lot easier.
You should be able to get about 15 to 18 rolls from one batch. Pinch the rolls into a nice shape. and brush with melted butter.
Cover with a clean towel and let the rolls rise for 30 minutes.
Cook at 375 degrees for 12 to 15 minutes.
What could be better then homemade rolls and chicken salad?

Holy cow! I know what I'm going to make in two weeks when we have a pot-luck dinner with some friends! I'll make sure not to burn them!

Drooling on the key board is not good. Not good at all. But your last photo has my mouth watering. YUM! I have never made chicken salad, but that's about to change. And, would you believe I donated my bread machine to charity becuase we never used it? What was I thinking???

What a wonderful idea- I use our bread machine to make pizza dough, but have never tried rolls-looks delish!

Your recipes make me hungry just reading them. I have not used my bread machine in years and now I may have to pull it out! And that chicken salad out of bbq chicken looks delicious!!

I am so going to try these rolls! There's just something satisfying about making homemade yeast rolls. Very nice.
